You can skip the tutorial at the very beginning, that's what I did and then I just got the quest for that Idol where I have to ask 10 lords about it and got plopped into the world. I don't know if there are any other points where you can skip it past that point though. That 10 lords quest is worse than the tutorial. It should be skippable.
I haven't quite done battle of that sice much yet, but if it's anything like previous installments then it's limited by the battle size. Usually it would go by the sizes of each army and allocate a balanced number to each army (if you had 50% more troops your portion of the allocated troops will be 50% larger than the opponent's).

I'll just have to remember not to take family members into my party before I have a fief to set them as a governor in the future. There really should be a way to tell family/companions to leave the party for a while, there was a way to do that in warband (at least in mods for it, don't remember if it was an option without mods)
No smithing companions. I'm roughly 600 days in. Hopefully one spawns in sooner or later. Took a while for a "the Swift" companion to spawn in too. I have also noticed something similar with companions. I saw a post here and didn't think much about it, at first. Dismiss a companion and they're gone. I noticed in a bandit camp that I could still select my fired companion. Unfortunately, I tend to strip em naked before I send em off into the wilderness, so the companion was useless.
I've had my siblings, spouses, and companions die on me though. And all of their items vanished with them. If you pay attention to either your combat log or the after-combat casualty report, it will tell you if a companion has died. In the loot screen, you have the option to still go over to that companion and alter their gear.
The second way to dismiss a companion is by using a clan menu. First, you should open this menu using primary hotkey L. After that, scroll down to see all companions grouped in the thematic list.
